Ingredients:
- Pork Carnitas – I love this crockpot carnitas recipe.
- Quinoa
- Black beans
- Monterey Jack cheese
- Avocado
- Salsa
- Cilantro
- Lime
Instructions:
- Prep your ingredients. I make the crockpot carnitas to use for meals for the entire week. Cook up some quinoa and black beans. Slice limes. Store until ready to eat.
- Assemble the bowls with a healthy scoop of quinoa, beans and top with cheese. Pile on the pork.
- Add avocado, your favorite salsa and cilantro. Serve with a slice of lime and enjoy!
