Carnitas Burrito Bowls

ACTIVE TIME: 10 MIN. I SERVES: 6

Ingredients:

  • Pork Carnitas – I love this crockpot carnitas recipe.
  • Quinoa
  • Black beans
  • Monterey Jack cheese
  • Avocado
  • Salsa
  • Cilantro
  • Lime

Instructions:

  1. Prep your ingredients. I make the crockpot carnitas to use for meals for the entire week. Cook up some quinoa and black beans. Slice limes. Store until ready to eat.
  2. Assemble the bowls with a healthy scoop of quinoa, beans and top with cheese. Pile on the pork.
  3. Add avocado, your favorite salsa and cilantro. Serve with a slice of lime and enjoy!
