Irish Breakfast Nachos

ACTIVE TIME: 45 MIN. I TOTAL TIME: 45 MIN. I SERVES: 2

Ingredients:

  • 2 tablespoon olive oil
  • 1 tablespoon salted butter
  • 1 small yellow onion, finely diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 4 cloves of garlic, roughly minced
  • 6 slices of cooked center-cut bacon, chopped in half
  • 1 lbs frozen waffle cut fries
  • 2 poached eggs with runny yolks
  • Chives for serving
  • Salt & pepper to taste

White Cheese Sauce

  • 4 oz evaporated milk
  • 1 1/2 cups shredded white cheddar cheese
  • 1 teaspoon dry mustard
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions:

  1. Preheat the oven or air fryer to 400°.
  2. Start by melting the butter and oil in a large skillet. Add the diced peppers and onion, seasoning with salt and pepper. Stirring frequently, sauté until they begin to caramelize.
  3. While the peppers and onions are cooking, spread the frozen waffle fries evenly on a baking sheet or in the air fryer. Bake or fry for 15-20 minutes.
  4. To make the cheese sauce; add evaporated milk, dry mustard, salt and pepper to a medium saucepan. Whisk over medium-low heat for a minute or two.
  5. In a separate bowl, thoroughly combine the shredded cheese, cornstarch and lemon juice.
  6. In small amounts and mixing in between adding, slowly add the cheese mixture to the saucepan – you will be whisking continuously to create a smooth consistency before adding more cheese each time. Keep warm until ready to serve.*
  7. If not already done, poach desired amount of eggs.
  8. Assemble the nachos with a base layer of waffle fries. Add a few pieces of bacon and a generous amount of peppers/onions. Repeat with more fries, bacon and peppers/onions. Top with poached egg(s) and finish with the smooth white cheddar sauce.

*Add more evaporated milk if consistency becomes too thick.
