Simple Esquites

ACTIVE TIME: 10 MIN. I TOTAL TIME: 10 MIN.

Ingredients:

  • 16 oz corn, fresh or thawed
  • 1/2 red onion, finely diced
  • 1 bunch of cilantro, chopped
  • 6 oz crumbled cotija
  • Zest & juice of 1 lime
  • ~ 3 tablespoons of mayonnaise
  • Everything but the elote seasoning, to taste
    • Salt, chile pepper, chipotle, cumin
  • Good additions:
  • 1 jalapeno, seeded and diced
  • 1 avocado, cubed

Instructions:

  1. Mix it up and store in the refrigerator for up to 4 days.
