Ingredients:
- 16 oz corn, fresh or thawed
- 1/2 red onion, finely diced
- 1 bunch of cilantro, chopped
- 6 oz crumbled cotija
- Zest & juice of 1 lime
- ~ 3 tablespoons of mayonnaise
- Everything but the elote seasoning, to taste
- Salt, chile pepper, chipotle, cumin
- Good additions:
- 1 jalapeno, seeded and diced
- 1 avocado, cubed
Instructions:
- Mix it up and store in the refrigerator for up to 4 days.
