Ingredients:
- ~1.5 lbs extra lean ground turkey
- 1 small white or yellow onion, finely diced
- 1 tablespoon olive oil
- 2 cups cooked red beans
- 2 cups cooked pinto beans
- 1 large “big beef” tomato, or another large variety, diced
- 3 cups vegetable stock
- 3 tablespoons chili powder
- 2 tablespoons smoked paprika
- 1 1/2 tablespoons granulated garlic
- 1 1/2 tablespoons granulated onion
- 1 tablespoon chicken bouillon
- 1 tablespoon ground black pepper
- 3 teaspoons coriander
- 2 teaspoons cumin
- Kosher salt, to taste
For serving
- Chives
- Red onion
- Shredded cheese
- Sour cream
- Pickled jalapeños
Instructions:
- Start by cooking down the diced tomatoes with the olive oil and 1 cup of water in a large Dutch oven or pot. Season with salt and pepper. Stirring often, allow the tomatoes to soften before adding the ground turkey.
- When the turkey is mostly cooked and crumbled, add the diced onions. Stir frequently until the onions become translucent.
- Next add the beans, vegetable broth and all of the seasonings. Stir gently to combine and remember to season with kosher salt to taste.
- Turn the heat to medium low and allow to cook for at least 30 minutes before serving. Top with cheese, red onions, sour cream etc. with Fritos for a true walking taco taste.
