One Pot Turkey Chili

ACTIVE TIME: 30 MIN. I TOTAL TIME: 1 HR. I SERVES: 4-6

Ingredients:

  • ~1.5 lbs extra lean ground turkey
  • 1 small white or yellow onion, finely diced
  • 1 tablespoon olive oil
  • 2 cups cooked red beans
  • 2 cups cooked pinto beans
  • 1 large “big beef” tomato, or another large variety, diced
  • 3 cups vegetable stock
  • 3 tablespoons chili powder
  • 2 tablespoons smoked paprika
  • 1 1/2 tablespoons granulated garlic
  • 1 1/2 tablespoons granulated onion
  • 1 tablespoon chicken bouillon
  • 1 tablespoon ground black pepper
  • 3 teaspoons coriander
  • 2 teaspoons cumin
  • Kosher salt, to taste

For serving

  • Chives
  • Red onion
  • Shredded cheese
  • Sour cream
  • Pickled jalapeños

Instructions:

  1. Start by cooking down the diced tomatoes with the olive oil and 1 cup of water in a large Dutch oven or pot. Season with salt and pepper. Stirring often, allow the tomatoes to soften before adding the ground turkey.
  2. When the turkey is mostly cooked and crumbled, add the diced onions. Stir frequently until the onions become translucent.
  3. Next add the beans, vegetable broth and all of the seasonings. Stir gently to combine and remember to season with kosher salt to taste.
  4. Turn the heat to medium low and allow to cook for at least 30 minutes before serving. Top with cheese, red onions, sour cream etc. with Fritos for a true walking taco taste.
