This recipe makes one generous salad. The other halves of fruit and avocado can be used for another serving, I save mine for the following day to make another easy lunch.
Dressing
- 2 tbs olive oil
- 2 tbs balsamic
- 1 garlic clove
- 1 tbs dried or fresh chives
- Minced shallot, to taste
- Salt & pepper
Salad
- 1/2 sliced peach
- 1/2 sliced plum
- 1/2 large avocado
- 2-3 tbs feta
- Handful of walnuts
- Baby spinach mix
Instructions:
- Add all dressing ingredients to a resealable container, a jar with a lid works perfectly. Shake to combine and set aside.
- Assemble your salad in a large bowl, drizzle half of the dressing on each serving.
- Enjoy.
