Peachy Summer Salad

This recipe makes one generous salad. The other halves of fruit and avocado can be used for another serving, I save mine for the following day to make another easy lunch.


  • 2 tbs olive oil
  • 2 tbs balsamic
  • 1 garlic clove
  • 1 tbs dried or fresh chives
  • Minced shallot, to taste
  • Salt & pepper


  • 1/2 sliced peach
  • 1/2 sliced plum
  • 1/2 large avocado
  • 2-3 tbs feta
  • Handful of walnuts
  • Baby spinach mix


  1. Add all dressing ingredients to a resealable container, a jar with a lid works perfectly. Shake to combine and set aside.
  2. Assemble your salad in a large bowl, drizzle half of the dressing on each serving.
  3. Enjoy.
