Ingredients:
- Small potatoes
- 3 tablespoons of olive oil
- 2 tablespoons ranch seasoning
- Freshly grated Asiago cheese (I like a rosemary Asiago for potatoes)
- Candied prosciutto (I like this easy recipe)
- For topping: Parsley, chives, or both.
Instructions:
- Preheat oven to 400°.
- Line a baking sheet with parchment paper.
- In a large bowl, toss the potatoes in the olive oil and ranch seasoning mix until well coated.
- Place the potatoes on the lined baking sheet, spreading them out evenly. Carefully slice a slit in each one.
- Bake for about 45 minutes or until the outsides are crispy and the insides are fork tender.
- When ready to serve, gently squeeze or break each potato open and add a healthy pinch of shredded Asiago.
- Top with a dollop of sour cream, a piece of candied prosciutto, and a sprinkle of your herb choice.
