Mini Baked Potatoes with Candied Prosciutto

ACTIVE TIME: 15 MIN. I TOTAL TIME: 1 HR. 15 MIN.

Ingredients:

  • Small potatoes
  • 3 tablespoons of olive oil
  • 2 tablespoons ranch seasoning
  • Freshly grated Asiago cheese (I like a rosemary Asiago for potatoes)
  • Candied prosciutto (I like this easy recipe)
  • For topping: Parsley, chives, or both.

Instructions:

  1. Preheat oven to 400°.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, toss the potatoes in the olive oil and ranch seasoning mix until well coated.
  4. Place the potatoes on the lined baking sheet, spreading them out evenly. Carefully slice a slit in each one.
  5. Bake for about 45 minutes or until the outsides are crispy and the insides are fork tender.
  6. When ready to serve, gently squeeze or break each potato open and add a healthy pinch of shredded Asiago.
  7. Top with a dollop of sour cream, a piece of candied prosciutto, and a sprinkle of your herb choice.
