Copycat “Yolko Ono” Breakfast Sandwich

My copycat recipe for the timeless favorite from Portland’s Fried Egg I’m in Love

ACTIVE TIME: 20 MIN. I TOTAL TIME: 20 MIN. I SERVES: 1

Ingredients:

  • 2 slices of gluten free sourdough bread
  • 1 seasoned sausage patty
  • 1 fried egg
  • 2 slices of havarti cheese
  • Pesto
  • Sriracha mayo
  • Kosher salt and cracked black pepper, to taste

Instructions:

  1. Toast both slices of bread.
  2. Spread a healthy helping of sriracha mayo and pesto on each slice.
  3. Cook your sausage patty and fry up your egg to your liking (I prefer over-medium), season with salt and pepper.
  4. In the same skillet, layer in the following order: meat, cheese, egg, cheese. Cover and steam to melt the cheese.
  5. Place the delicious stack on your prepared toast slices and enjoy.
