Ingredients:
- 3 – 4 chicken breasts
- 1 1/2 – 2 cups Spinach Artichoke & Parmesan dip, I use this La Terra Fina version from Costco
- 1/2 cup shredded Parmesan cheese
- 3 tablespoons olive oil
- 1 1/2 teaspoons onion powder
- 1 1/2 teaspoons garlic powder
- Kosher salt & pepper
Instructions:
- Preheat the oven to 400°.
- Start by preparing a glass baking dish with a drizzle of olive oil. Next, carefully slice a pocket into each chicken breast.
- Place the prepared chicken into the baking dish and stuff each one with a few spoonfuls of the spinach artichoke dip, reserve about 1/2 cup for topping later. Secure each breast with a couple of toothpicks to keep the good stuff in.
- Once you’re satisfied with the stuffing, brush the chicken with olive oil and season with garlic powder, onion powder, salt and pepper.
- Place the chicken in the oven and bake, uncovered, for 20 minutes. When the timer goes off, top each breast with the reserved dip and the Parmesan cheese. Return the dish to the oven and bake for an additional 15-20 minutes or until the cheese is golden and bubbly.
- Serve immediately over rice and enjoy.
