Marshmallow Cookies

PREP TIME: 15 MIN. I COOK TIME: 10 MIN. I MAKES: ABOUT 12 COOKIES

Ingredients:

  • 1 1/4 cups gluten free flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 cup salted butter
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup cereal marshmallows

Instructions

  1. Preheat the oven to 350°.
  2. Combine the flour, cream of tarter and baking soda in a small bowl. Set aside.
  3. In a separate bowl, cream the butter and sugar with a hand mixer. Briefly mix in the vanilla and eggs.
  4. Slowly add in the dry ingredients until a dough forms.
  5. Dump in the cereal marshmallows and mix in by hand.
  6. Line a baking sheet with parchment paper.
  7. Scoop the dough and place about 2 inches apart on the sheet.
  8. Bake for 10-12 minutes or until the edges begin to lightly brown.
  9. Allow to cool and enjoy.
