Roasted Corn Queso Fundido

ACTIVE TIME: 30 MIN. I TOTAL TIME: 30 MIN. I SERVES: 4

Ingredients:

  • 3 tablespoons butter
  • 2 cups roasted frozen corn
  • 4 cloves of garlic, minced
  • 1 small onion, diced
  • 1 jalapeno, seeded and diced
  • 1 cup bell peppers, finely diced
  • 2 cups shredded Monterey Jack cheese
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • salt and pepper to taste
  • green onions
  • cilantro

Instructions:

  1. Start by adding the butter, onions, peppers, garlic and corn in a deep skillet over medium high heat; stirring often.
  2. When the onions become translucent, add the olive oil, shredded cheese and lime juice. Mix throughly to combine and allow the cheese to melt.
  3. Let the cheese bubble for a few minutes longer to create a crispy cheese crust before removing the skillet from heat.
  4. Serve hot with a handful of cilantro and green onions.
