Ingredients:
- 3 tablespoons butter
- 2 cups roasted frozen corn
- 4 cloves of garlic, minced
- 1 small onion, diced
- 1 jalapeno, seeded and diced
- 1 cup bell peppers, finely diced
- 2 cups shredded Monterey Jack cheese
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- salt and pepper to taste
- green onions
- cilantro
Instructions:
- Start by adding the butter, onions, peppers, garlic and corn in a deep skillet over medium high heat; stirring often.
- When the onions become translucent, add the olive oil, shredded cheese and lime juice. Mix throughly to combine and allow the cheese to melt.
- Let the cheese bubble for a few minutes longer to create a crispy cheese crust before removing the skillet from heat.
- Serve hot with a handful of cilantro and green onions.
