Loaded Turkey, Bacon & Pesto Sandwich

Ingredients:

  • Gluten Free Bread
  • Pesto
  • Mayo
  • Sliced oven roasted turkey
  • Peppered bacon, cooked
  • Shredded mozzarella
  • Shredded Italian cheese blend
  • Sun-dried tomatoes
  • Thinly sliced red onions
  • Arugula
  • Olive oil
  • Lemon juice
  • Italian seasoning
  • Crushed red pepper flakes
  • Salt & pepper

Instructions:

  1. Preheat the oven to 400°.
  2. Start by assembling the sandwiches open face on a sheet pan. Add a thin layer of pesto to one side of the sandwich and mayonnaise on the other.
  3. Layer slices of turkey on the mayonnaise side. Sprinkle a small handful of the Italian cheese blend on top of the turkey.
  4. On the pesto side, layer the sun dried tomatoes and bacon. Top with the shredded mozzarella cheese.
  5. Season both sides with Italian seasoning, salt and pepper, to taste.
  6. Place into the oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
  7. While the sandwiches are baking, toss the arugula and sliced red onion in about a tablespoon of olive oil and a drop or two of lemon juice. Season with salt, pepper and crushed red pepper flakes.
  8. When ready, top one half of the sandwich with the marinated arugula mix and place the other half on top.
  9. Cut in half and serve with a side of pepperoncinis.
